Overnight Pumpkin Spice French Toast

This delicious breakfast dish is perfect for a cozy fall morning or holiday brunch. The overnight soaking ensures that the bread is perfectly soaked and infused with pumpkin spice flavors. The pecans on top add a nice crunch, but you can skip them if you prefer. Enjoy!

Ingredients :

  • 1 loaf of French bread, cut into 1-inch slices
  • 8 large eggs
  • 1 cup whole milk
  • 1 cup canned pumpkin puree
  • 1/2 cup heavy cream
  • 1/2 cup brown sugar
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 cup chopped pecans (optional)
  • Maple syrup, for serving

Instructions :

  1. Grease a 9×13 inch baking dish with cooking spray.
  2. Arrange the slices of French bread in a single layer in the baking dish.
  3. In a large mixing bowl, whisk together the eggs, milk, pumpkin puree, heavy cream, brown sugar, pumpkin pie spice, vanilla extract, and salt until well combined.
  4. Pour the egg mixture over the bread slices in the baking dish, making sure each slice is fully coated.
  5. Cover the baking dish with plastic wrap and refrigerate for at least 8 hours or overnight.
  6. Preheat your oven to 350°F (175°C) and remove the baking dish from the fridge. Let it sit at room temperature for 30 minutes before baking.
  7. Sprinkle the chopped pecans over the top of the French toast, if using.
  8. Bake the French toast for 45-50 minutes, or until the top is golden brown and the bread is cooked through.
  9. Let the French toast cool for a few minutes before serving.
  10. Serve the Overnight Pumpkin Spice French Toast warm with maple syrup on top.
